Cabernet Sauvignon

ORIGIN AND HISTORY

Cabernet Sauvignon is one of the most recognized and widely cultivated red grape varieties in the world. It originates from Bordeaux, France, where it emerged in the 17th century as the result of a natural cross between Cabernet Franc and Sauvignon Blanc. Since then, it has traveled across all continents, adapting to different climates and soils, yet never losing its firm character and unmistakable elegance.

At Javier Sanz Viticultor, we have embraced this variety not as an international replica, but as our own interpretation. Grown at altitude, on poor soils and with strong temperature contrasts, our Cabernet expresses a unique, precise and Mediterranean version of this great universal grape.

CHARACTERISTICS OF THE CABERNET SAUVIGNON GRAPE

With a thick skin, small berries and compact clusters, Cabernet Sauvignon is a late-ripening variety, ideal for warm climates with cool nights. Its cultivation requires patience and precision, but it rewards with wines of great ageing potential and aromatic richness.

In our vineyard, the balance between sunlight and freshness allows the grapes to ripen slowly, developing fine tannins, balanced acidity and a natural complexity straight from the vineyard.

WHAT DOES A CABERNET SAUVIGNON WINE TASTE LIKE?

Cabernet Sauvignon is synonymous with intensity, structure and depth. On the nose, it reveals aromas of ripe black fruit (cassis, plum), along with spicy notes (black pepper, clove), hints of tobacco leaf, roasted pepper, and a subtle background of cedar or graphite, especially if it has been aged.

On the palate it is concentrated and firm, with pronounced yet polished tannins, an acidity that brings freshness, and a long finish that leaves a lasting impression. With ageing, it gains complexity and tertiary notes ranging from leather to cocoa and truffle.

Perfect to pair with red meats, spiced dishes, roast lamb, aged cheeses, or simply to enjoy in a large glass, without haste, the way great wines are meant to be enjoyed.
