Chardonnay
The Chardonnay is undoubtedly one of the most recognized and versatile white grape varieties in the world. Originally from the Burgundy region in France, it has conquered vineyards across every continent thanks to its ability to reflect the character of the place where it is grown. Far from being a uniform variety, Chardonnay is a blank canvas that precisely expresses the climate, the soil, and the hand of the winegrower.
At Javier Sanz Viticultor, we work with it with a clear vision: moving away from stereotypes and exploring its fresher, more elegant and subtle side, adapted to the continental character of our environment. Here, Chardonnay does not imitate—it interprets its own role with a voice of its own. CHARACTERISTICS OF THE CHARDONNAY GRAPEChardonnay has small, compact clusters, thin-skinned berries, and early ripening. It adapts well to cool and temperate climates, but in areas with a wide temperature range—such as Finca Saltamontes—it offers a balanced ripening, preserving acidity without losing complexity.
Its profile depends greatly on the soil and the harvest timing. In our stony, well-drained soils, the grape expresses itself with subtle minerality, crisp white fruit, and a very distinctive creamy texture. WHAT DOES A CHARDONNAY WINE TASTE LIKE?Chardonnay wine is fresh, elegant, and finely drawn. On the nose, notes of green apple, pear, ripe citrus, and white flowers dominate, with subtle hints of brioche, hazelnut, or butter if it has had contact with lees or oak. On the palate it is enveloping yet taut, with balanced acidity, good structure, and a clean, persistent finish.
It is a versatile, food-friendly wine, capable of pairing with everything from seafood and white fish to poultry, creamy pasta dishes, mild cheeses, or elegantly inspired Asian cuisine. Its restrained and precise style also makes it an excellent choice to enjoy on its own.
