This wine is made exclusively with Verdejo grapes from the oldest vines of the family, grown in the historic “Finca Fuente de los Vaqueros”, located in La Seca. The poor soils of the estate, composed of boulders on the surface and a clay and limestone subsoil, facilitate ventilation and natural drainage of the vines. These conditions contribute to the exceptional organoleptic qualities of the wine, enhancing its mineral and fresh character.
The grapes are harvested by hand, with a meticulous selection of clusters both in the vineyard and in the winery, using a sorting table. Fermentation takes place in French and American oak barrels, where the wine remains in contact with its lees for six months, with periodic batonnage to achieve greater complexity and texture. After this process, the wine rests in stainless steel tanks before bottling. Finally, it is aged in bottle for 12 months to refine its characteristics before release.
Bright yellow in color, this wine stands out for its elegant and complex nose.
The nose highlights hay, ripe fruit, white flowers and dry earth, complemented by notes of pastries, vanilla, and fruits such as peach, nectarine and dried apricots.
The palate is ample, savory and unctuous, with a perfect balance between minerals and oak. Its herbaceous and refreshing flavors, with citrus nuances and a subtle marine reminiscence, leave a persistent and pleasant sensation on the palate.
