This wine comes from Javier Sanz’s most personal selection from Pago Familiar Villa Narcisa, in La Seca. The grapes come from a 45-hectare vineyard with more than 40 years of history. These vines grow in unique soils, with boulders on the surface and a clay subsoil, which gives the wine a marked minerality.
The winemaking process follows a strict temperature control to protect the fresh and fruity aromas of the Verdejo. Cryomaceration, together with natural clarification of the must by gravity for one day, precedes fermentation at less than 15ºC in stainless steel tanks. The wine is then aged for 3 months on its lees, providing greater complexity and texture before bottling.
This wine is bright in the glass, with delicate greenish reflections.
On the nose, it displays fresh and vibrant aromas of green apple and citrus fruits reminiscent of sweet grapefruit, accompanied by subtle
notes of anise and fennel.
The palate is dry, medium-bodied, with a refreshing acidity that makes it ideal to enjoy at any time of the day.
