ORIGIN AND HISTORY

The Riesling is one of the world’s great white grape varieties. Originally from the Rhine Valley in Germany, it has been documented since the 15th century and has historically been recognized for its aromatic precision, high natural acidity, and extraordinary longevity. Unlike other international varieties, Riesling does not seek volume or dominance on the palate, but rather pure expression, finesse, and tension.

At Javier Sanz Viticultor, we cultivate Riesling as an act of exploration: what happens when a variety so closely linked to Central European cold climates adapts to the extreme continental climate of Castilla y León?

CHARACTERISTICS OF THE RIESLING GRAPE

Riesling presents small clusters, thin-skinned berries, and a high content of malic acids, which gives it its characteristic freshness. It is sensitive to soil type, and in our estate—with its limestone and stony composition—it develops a vertical, precise, and mineral profile, with an acidity that supports the wine without being aggressive.

WHAT DOES A VERDEJO WINE TASTE LIKE?

Riesling wines are sharp and highly expressive. On the nose, notes of lime, green apple, citrus peel, white flowers, and a delicate mineral undertone stand out, which with age may evolve into nuances of honey, wax, and warm stone.

On the palate it is tense, with marked but perfectly integrated acidity, medium body, and a long, saline, refreshing finish. It is a wine for ageing, full of nuance and precision, ideal for lovers of elegance without artifice.

It pairs perfectly with oily fish, seafood, spicy Asian cuisine, sweet-and-sour dishes, goat cheeses and, thanks to its balance, also with fusion cuisine or complex tasting menus.
