ORIGIN AND HISTORY

In an abandoned vineyard, among old vines, a red plant appeared that didn’t quite fit with what was known. Different in its ripening rhythm, posture, and cluster shape, it began attracting attention in the vineyard before it did in the winery.

From that point on, we began a patient process: selecting canes, multiplying them in small plots, and performing microvinifications vintage after vintage. Today we are still in the study phase, with a clear goal: to determine whether this unnamed red can become a quality wine with its own character within the Javier Sanz Viticultor project.

A UNIQUE CLONE

The fact that it still has no name is almost a statement of intent: we are in the midst of the discovery process.

This red variety is being vinified in very small tanks, experimenting with different harvest dates, extraction techniques, and lees work to understand which wine style suits it best.

CHARACTERISTICS OF THE GRAPE

In the vineyard, this unnamed red shows:

• Medium-sized clusters.

• Slow ripening, which allows it to preserve acidity even in warm vintages.

• A balanced relationship between color, sugar, and tannin, ideal for making structured wines without harshness.

All of this makes it a very interesting candidate for producing lighter reds, with freshness and moderate ageing potential, far from an overly ripe and alcoholic profile.

WHAT DOES THE WINE TASTE LIKE?

We are still “listening” to what it wants to tell us, but there are some traits that repeat from vintage to vintage:

• Aromas of fresh red fruit (strawberry, raspberry) and some juicy black fruit, with light floral hints and a very subtle spicy note.

• On the palate it is smooth and flavorful, with fine, non-aggressive tannins and an acidity that adds tension and extends the finish.

• Medium body, good balance, and a style that encourages more sipping.
