How to tell before you open it

Is Verdejo sweet or dry? Verdejo is almost always a dry white wine, which under European rules means it holds no more than four grams of sugar per litre, or nine when its acidity balances it out, even though its ripe fruit and aniseed notes lead many people to assume it is sweet. Alongside that dry style there are semi-sweet and sweet Verdejos made on purpose, and knowing the difference makes it much easier to choose the right bottle for the right dish.

Why does Verdejo taste sweet if it is a dry wine?

The impression of sweetness in a dry Verdejo comes from its aromas rather than from sugar, because the grape gives notes of tropical fruit, grapefruit, aniseed and fennel that we tend to associate with sweet foods, even when almost no unfermented sugar remains in the glass. The alcohol itself adds a certain roundness on the palate, and in many cases the wine is also given a short period on its lees that brings volume and a softer texture without adding any sugar at all. That is exactly the case with Javier Sanz Verdejo, which comes from the family’s Villa Narcisa estate in La Seca, in the province of Valladolid, from vines more than 40 years old, and whose tasting note describes a dry, medium-bodied wine with aromas of sweet grapefruit, aniseed and fennel, where the word “sweet” refers to the fruit and not to sugar. The refreshing acidity that comes from the continental climate of the area, with very hot summer days and night-time drops of up to 20 degrees, balances that aromatic profile and explains why a well-made Verdejo can feel fruity and dry at the same time.

What makes a wine dry, medium dry, medium or sweet?

The sweetness category of a wine is set in the European Union by Commission Delegated Regulation (EU) 2019/33, which defines it according to the grams of sugar left in the wine once fermentation has finished, so it has nothing to do with how sweet the wine seems to whoever drinks it. A still wine counts as dry when it has no more than 4 grams per litre, or up to 9 grams if its total acidity is no more than 2 grams below the sugar content, and it becomes medium dry up to 12 grams, or up to 18 grams when the acidity also allows it. Above those figures and up to 45 grams the wine is classed as medium or medium sweet, while from 45 grams per litre upwards it is sweet, a line that separates light whites with a gentle touch of sweetness from wines made for dessert. For still wines, unlike sparkling ones, stating the sugar content on the label is optional, so many producers leave it off their dry Verdejos and the buyer has to rely on the name of the wine, the back label or the technical sheet. When a bottle of Verdejo says nothing about it, the most likely answer is that it is dry, since semi-sweet and sweet styles usually make it clear in the name of the wine itself, as happens with the two that this winery produces.

Semi-sweet Verdejo, a white with a gentle touch of sweetness

Between dry Verdejo and dessert wine sits an intermediate style that appeals to anyone looking for an easy-drinking white, and at the winery it takes the form of Javier Sanz Semidulce, made entirely from Verdejo grapes. Its tasting note describes a smooth and refreshing wine, pale in colour, with notes of melon and pineapple, which shows a light sweetness and grapey flavours on the palate together with a soft, well-balanced acidity, and it is intended for people who do not enjoy heavy or cloying sweet wines. The winery suggests serving it in an ice bucket alongside aperitifs, light dishes and desserts, which makes it a natural choice for a terrace, an informal lunch or a relaxed end to a meal when a richer sweet wine would feel like too much. Thanks to its friendly profile and accessible price, it is also a good way in for anyone who is starting to drink white wine and still finds classic dry Verdejo a little too austere.

Is there such a thing as a sweet Verdejo?

There is, and at Javier Sanz Viticultor it is called Dulce de Invierno, a sweet wine born from a blend of Verdejo and Gorda de Moldavia, a grape from the Muscat family. Its sweetness and amber tones come from a three-stage process that combines freezing the grapes, drying them naturally in a shaded loft and harvesting late, after which the wine rests for eight months in French oak barrels. In the glass it shows a bright golden colour and aromas of dried apricot, fig and orange peel, while on the palate it is clearly sweet, broad and silky, with an elegant acidity and a subtle hint of oak that keep the whole from feeling heavy. It is bottled in a 500 ml format and shows the other side of a grape that most people only know in its freshest and driest version.

What should you serve with each style of Verdejo?

Each level of sweetness calls for a different table, and getting the match right is the best way to let the wine show what it can do. Dry Verdejo, with its acidity and fresh profile, goes well with white fish, shellfish and delicately flavoured dishes that are not too heavily seasoned. The semi-sweet style, for its part, is best with aperitifs, light dishes and desserts, served very cold in an ice bucket as the winery recommends, so that its light sweetness stays refreshing. Dulce de Invierno, served at around 8 degrees, is a fine partner for blue cheeses, soft cheeses and foie gras, and after the meal it pairs with desserts made with nuts or chocolate, which gives it a natural place on the Christmas menus that many people are starting to plan around now. For more ideas on matching bottles to moments, the Magazine has a guide to choosing the right wine for the occasion.

One vineyard and several ways of understanding Verdejo

The fact that a single grape can give a dry, mineral white, a light semi-sweet wine and a golden dessert wine says a great deal about the versatility of Verdejo, and also about the work behind each style in the vineyard and in the cellar. The Sanz family has grown this grape in La Seca for five generations, with records going back to 1863, and today farms more than 120 hectares of its own vineyards on poor soils with rounded pebbles, at an altitude of between 700 and 800 metres, where the sharp swings in temperature between day and night help preserve the acidity that supports even its sweetest wines. Over time, that close relationship with the land has made it possible to produce very different wines without losing sight of tradition, and anyone who would like to know more about the grape behind all of them can read the winery’s page on Verdejo and its history in the Rueda DO. Whatever the level of sugar in each bottle, the winery sees all of these wines as sharing the same origin, that of vines the family has looked after for generations and that continue to shape the character of everything bottled in La Seca.

Verdejo is almost always a dry white wine, even if its fruity aromas suggest sweetness.
