Javier Sanz Fermentado en Barrica is made exclusively from Verdejo grown on the family’s oldest vines at the Fuente de los Vaqueros estate in La Seca, where poor soils of rounded pebbles over clay and limestone give the vines natural drainage, and where a continental climate with night-time drops of up to 20 ºC helps the grapes keep their acidity and aromas. The grapes are picked by hand and selected twice, first in the vineyard and then on the sorting table.
The must ferments in French and American oak barrels and stays there for around six months on its lees with regular bâtonnage, before resting in stainless steel and spending a further 12 months in bottle. The result is a golden wine with an elegant, complex nose of hay, ripe fruit, flowers and dry earth alongside pastry, vanilla, peach and dried apricot, and a broad, rich palate with citrus and saline notes and a very long finish. Served at 8 to 10 ºC, it pairs with shellfish, seafood rice, grilled or baked fish, smoked dishes, foie gras and fresh cheese.
