Sauvignon Blanc arrived in the area from France more than 40 years ago and, thanks to the shape of its bunches and of the vine itself, adapted exceptionally well to the stony soils of the region, where the winery grows it on trellises in the Paraje del Camino Real. The continental climate, with very cold winters and summer nights up to 20 ºC cooler than the days, keeps the acidity and aromas intact until the night-time harvest.
After a short maceration, the must settles by gravity for a day and ferments slowly below 15 ºC in stainless steel, and the wine is bottled after two months on its fine lees. Pale yellow with green glints, it shows lime, grass and white flowers alongside stone fruit, a hint of petrol and tropical notes of pineapple and passion fruit, with a fresh, medium-bodied palate and a floral, mineral finish. Served at 6 to 8 ºC, it pairs with raw or lightly cooked shellfish, prawns, crab and white fish, as well as gazpacho, vichyssoise or a goat’s cheese salad.
