Javier Sanz Viticultor brought its genetics back after years of research, since the clone ripens later than standard Verdejo and gives elegant aromas and higher natural acidity, and today grows it exclusively in a trellised vineyard of around 20 years in La Seca.<\/p>\n<p>The grapes undergo a cold maceration and, after pressing, the must settles by gravity for 24 hours before fermenting below 15 \u00baC, a slow process that keeps the fruit aromas intact.
