The variety Verdejo Malcorta was almost extinguished but, after years of research, Javier Sanz Viticultor has managed to bring it back to use in order to craft this unique wine. It is an extremely unusual clone of Verdejo which was no longer used due to the difficulty of its haversting (which explains the name “Mal-corta”: Bad/difficult to cut).

Malcorta is a historic clone of Verdejo that was traditionally grown in the Rueda DO until growers abandoned it, because its woody stalks made the bunches very hard to cut, hence the name, which means badly cut. Javier Sanz Viticultor brought its genetics back after years of research, since the clone ripens later than standard Verdejo and gives elegant aromas and higher natural acidity, and today grows it exclusively in a trellised vineyard of around 20 years in La Seca.
The grapes undergo a cold maceration and, after pressing, the must settles by gravity for 24 hours before fermenting below 15 ºC, a slow process that keeps the fruit aromas intact. The wine is bright pale straw in colour, with clean, intense aromas of citrus, white flowers and stone fruit over a soft mineral note, and a lively, fresh palate with marked persistence that suits shellfish and white fish such as hake, cod or sole, grilled or baked.
